Rocky Road Fudge



170 gms Dark Chocolate (chopped roughly)
1/4 cup condensed milk
1 tbsp unsalted butter
1/4 cup nuts & raisins
5 tbsp cream
2 cups of mini multi colored marshmallows



Line a small pan with butter paper or foil & grease it lightly with butter.

In a bowl add chocolate and on double boiler melt the chocolate.

Add cream stir then add the butter & condensed milk.

Put off the flame.

Add the nuts and the marshmallows. Mix well.



Pour the mixture in the prepared pan and put it in the fridge for 4-5 hours to set.



Remove and cut into small square pieces.

Special treat to the kids as well as big kids tooo.. YUMMYYYYY.

Yummilicious Chewy Brownies



Ingredients
1/3 cup cocoa powder
1½ teaspoons instant coffee powder
½ cup plus 2 Tablespoons boiling water
1¾ cups sugar
1¾ cups flour
450 gms dark chocolate, finely chopped
½ stick unsalted butter, melted
½ cup plus 2 Tablespoons vegetable oil
3 large eggs
¾ teaspoon salt
30 gms Walnuts, roughly chopped (optional)

Preparation :

Add cocoa, coffee powder, and boiling water together in large bowl. Add chocolate and mix till melted. Add butter and oil. Add eggs and mix until smooth. Now to this mixture add sugar until dissolved, flour,salt & mix well. Now add the chopped walnuts

Heat the oven to 180 degrees C. Line a square baking pan with foil, and grease it with butter lightly.

Pour batter into prepared pan and bake for approx 30 to 35 minutes until toothpick inserted comes out with few moist crumbs.

Let it cool completely. Cut into 2-inch squares or as big as you like or any shape you like and serve.





If you like it the way I like it then cut a biggg peice, put it in a big bowl/plate, warm it in the microwave slightly for 7-8 seconds then add on top a dollop of chocolate or vanilla icecream, garnish it with chopped toasted nuts of your choice. Voila warm chewy gooeeey brownie is ready for walloping..

Mini Cheesecake



1 Pkg gingersnap cookies(You can use chocolate chip cookies or oreos)
260 gms cream cheese-softened
1/2 cup granulated sugar
1 tsp. vanilla essence
2 large eggs
15 muffin paper cups


Preheat oven to 160 C.

Place paper muffin cups in a muffin pan.


Place single cookies in each muffin cups as the base for the cheesecake.



Beat together the cream cheese, sugar, vanilla, and eggs. Pour the mixture equally into the muffin cups about 3/4 level.



Bake it in preheated oven for 25 minutes. Cool it.



Top it with melted chocolate or whipped cream.

To make it more colourful sprinkle some hundreds & thousands. ENJOY ;)

Chocolate Almond Biscotti




215 gms brown sugar
250 gms all-purpose flour
3 Tbsp cocoa powder
2 Tbsp instant coffee
1 Tsp baking soda
1/4 Tsp salt
3 large eggs
1 1/2 Tsp vanilla
150 gms Almonds toasted & Chopped roughly 150 gms chocolate,roughly chopped



Preheat oven to 180C

To toast almonds: spread on a baking sheet and bake for 15 minutes or until lightly browned. Remove from the oven and place nuts in a bowl. Cool and then chop coarsely. Set aside while you prepare the dough.

Reduce temperature of oven to 150 degrees C. Line a large baking sheet with parchment paper.

Sift or whisk together the flour, cocoa, coffee, baking soda and salt into a bowl then set aside.

In the bowl beat the eggs and vanilla for about 30 seconds. Now mix in the chocolate/sugar and flour mixtures until a stiff dough forms, adding the almonds.

On a floured surface divide the dough in half. Form each half into a log 12 inches (30 cm) long. Do this by rolling the dough back and forth into a cylinder shape with floured hands. Transfer the logs to the baking sheet, spacing them well apart (width-wise on the pan), and pat to even the shapes. Bake until almost firm to the touch, about 35 - 40 minutes (logs will spread during baking). Remove from the oven, place on wire rack, and let cool for 10 minutes.

Transfer the logs to a cutting board. Using a serrated knife cut the dough into slices. Arrange the slices cut-side down on the baking sheet. Bake 15 minutes. Turn the slices over and bake until crisp and dry, about 15 minutes longer. Remove from oven and let cool on wire rack.

Devil's Food Cake

It was my friend Carol’s birthday yesterday and she requested me to bake a chocolate cake. I do bake cakes but wanted to make something special for a special friend so decided to try something different so I went to the site http://www.cacaoweb.net and tried the devils’ food cake. It turned out good but not as per my expectations. I baked the cake, made the frosting , assembled it but still there was something missing. It didn’t look that beautiful so Adrian suggested to decorate it with some chocolate shavings and it looke much better.
