Shepherd's Pie





















500 gms minced beef/lamb/chicken
2 med onions chopped
6 cloves of garlic minced
2 green chillies chopped finely
1 cup chopped carrots
1 cup chopped capsicum
1 cup green peas
4 big potatoes boiled (about 1 kg)
4 tablespoons butter
4 tbsp oil
1/2 tsp pepper powder
1 1/2 veg. Maggie Cube

METHOD

Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

While the potatoes are cooking, take 4 tbsp oil in a large frying pan.

Fry the green chillies then add the garlic brown lightly now add the onions cook until translucent for 10 minutes. Add carrots. Add capsicum & peas cook for 5 minutes. Add the mince, veg. cubes & pepper powder , Cook for another 10 minutes on slow flame until the mince has cooked.




















Mash potatoes in a bowl , add 4 tbsp butter, season with salt to taste.




















Spread the cooked mince mixture in a baking dish.





















Pour the mashed potatoes in a piping bag and pipe the mashed potatoes over the minced mixture.






































Bake it for 30 minutes in a preheated oven @ 180 Deg. C. Last few minutes put on the top flame and brown.

Potato Chops


Ingredients :

500 gms Potatoes
250 gms of mince (Beef/Lamb or chicken)
1 big onion (chopped finely)
2 medium tomatoes (chopped finely)
2 green chillies chopped finely
1" ginger chopped finely
7-8 garlic cloves chopped finely
1/4 bunch coriander leaves chopped finely
1/2 tsp turmeric powder
3/4 tsp salt
4 tbsp Oil

Boil the potatoes in enough water with 1 tsp salt until tender.

Once cooled peel the skin and mash it well to make a smooth dough. Keep it aside.


To make the stuffing :


Heat oil in a pan, add the minced ginger, garlic & chillies. Fry till garlic browns.

Add the Onions , brown. Add the tomatoes, fry till all water gets evaporated.

Add the turmeric, fry for another minute.

Add the washed & strained mince. Add Salt, mix well.

Leave it on slow flame for 10 minutes to cook. Put off the flame & sprinkle chopped coriander leaves. Cool the mixture.


To make the chops :

Take handful of mashed potato in your palm, Make a ball and then flatten the ball with your fingers to create a curved disk shape. Put 2 tsp of the mince mixture in the center and bring the potatoes together.


Wet your palms and smoothen the outer covering.


Now dip this in 1 beaten egg then roll it in the breadcrumbs.



Take a frying pan, heat 6 tbsp oil. Shallow fry the potato chops on slow flame till golden brown.



Enjoy with green chutney or make a sandwich with potato chop & a slice of cheese & salad.

Simple Meatball Curry with Steamed Rice


1/2 kg Beef Mince
1/2 onion chopped finely
2 flakes garlic
1/2 tsp black pepper powder
1/2 tsp salt
1/2 tsp chilli powder
1/2 tsp cumin powder

Mix all the above ingredients and make small meat balls and keep it aside.

Ingredients for the Gravy :

2 Med. Onion chopped finely
3 Big tomatoes chopped finely
5-6 flakes of garlic minced
1" ginger minced
1 chilli thinly sliced
1 tsp cumin powder
1 tsp red chilli powder
1/2 tsp turmeric powder
Salt as per taste ( about 1 tsp)
21/2 cups of water
4 Tbsp Oil

Take a deep saucepan put it on the flame, put in the oil. once the oil is heated add the finely chopped onions, fry till it is browned. Add the minced ginger garlic and fry for another 2-3 minutes. Add the chopped tomatoes fry till oil separates.
Add the chilli powder, turmeric & cumin powder fry for another minute. Add the water (if you want it more thin u may add more water), add the salt. Let the gravy come to a boil, now add the meatballs and leave it on slow fire for 15 minutes till the meatballs are cooked. Add the green chilli and put off the flame. Meatball curry is ready to be served. Enjoy it with steamed rice.

Hot & Sour Meatball Coriander Soup




250 gms Beef Mince
1/2 bunch Coriander leaves finely chopped
3 bsp Worchestshire Sauce
1 tbsp rice vinegar
1 tbsp hot suace
2-3 flakes garlic chopped
1" ginger ( julliene)
1/2 carrot (julliene)
1 green bell pepper (julliene)
3 Cups Water
2 veg. Maggi Cube
1/2 tsp salt
1/4 tsp black pepper powder
1 tbsp white vinegar


Preparation method

Put mince in a bowl, add the worcestshire sauce, hot sauce, rice vinegar, chopped garlic, 1 pinch of salt and 1/4 bunc of chopped coriander. Leave it in the fridge for 15 minutes. Shape them into small meatballs.

Take a pan, put 3 cups of water, add the veg. maggie cube & julliened ginger.
Let the stock boil. Add the meatballs and let it simmer for 10 minutes.
Put off the flame. Add the white vinegar, julliened carrot and bell pepper with 1/4 bunch of finely chopped coriander leaves. Soup is ready to be served

Stuffed Bread Rolls




These bread rolls were one of the hit snacks my mom made when we were little. Me & my Sis would wait for an opportunity for my mom to make these for us. She deep fries them which gives even golden color to these rolls and they taste even better & yummier but they are too greasy so I decided to bake it in the oven. It is also another variation of a toasted sandwich unlike the square or triangle. Kids are probably bored so they need some oval sandwiches which taste different, look different.


Any leftover dry potato vegetable, paneer, mince is fine. I prefer to make the stuffing out of mince.

Stuffing

1 pack of mince meat washed and drained
1 big Onion chopped fine
1 tsp chopped green chillies
1 tsp of chopped ginger
¼ tsp of pepper powder
½ bunch of coriander leaves (chopped fine)
¼ tsp turmeric powder
1 tsp vinegar
2-3 Tbsp Oil
1 tsp salt

Take oil in a medium pan, once hot put the chopped onion fry until it browns then add the green chilies, ginger. Once it is slightly brown add turmeric powder, pepper powder & the vinegar. Mix it well.

Now add the mince stir well , add 1 tsp of salt or as per your taste, add the coriander leaves and keep it on slow flame covered for 15 minutes until the mince is cooked and dry. Leave the mixture to cool.

HOW TO MAKE THE ROLLS.

Take a slice of bread apply butter on one side, dip the other side in water, remove it at once (or else the bread will get too soggy) immediately press it hard in between your palms to squeeze out the water. Now take 1 Tbsp full of mince filling and put it in the centre of the bread and pull the bread from all side to form like an oval roll. Make as many rolls you wish, now arrange them on a greased tray and put it in a preheated oven @ 200 deg C for 20 minutes until they are nicely browned. You may light the top flame for 2-3 minutes to give that beautiful brown color. Serve it with any chutney, ketchup, yoghurt or just eat it plain. We couldn’t wait to relish it as it is. If you are not worried about putting on those few extra calories then I suggest you deep fry them until golden brown and ENJOY.
